The best DFAC I've seen was the one in JB Elmendorf-Richardson in Alaska. I swore it looked like an actual restaurant.

But in terms of sheer quantity of food, it's hard to beat the one in Kuwait.

The points being touted in the article as massive improvements seem very much like normal running, for quite some time, at Comox, the Wardroom, and Nelles. Wondering how much retraining they're having to do with their cooks?

Last time I was in a Comox mess (admittedly some time ago) it was nowhere near the Wardroom. I guess it's been improved since?

The difference between the DFAC in AStan 2006 and Baghdad / Kuwait 2016 was remarkable

As a rule- pretty good. Like everywhere else, it depends alot on the staff and their motivation. Smaller facilities tend to have better food because they are cooking in smaller quantities and know their clients personally. I don’t think I have ever had a bad meal onboard a ship and one meal I had from a field “flying kitchen“ could only be described as 5 star- somehow the KO got his hands on prime rib and that was, hands down, the best prime rib that I have ever eaten in my life.

There was a reservist or civilian (not sure which) who allegedly used to be an executive chef in a former career. They worked at one of the CFB's kitchens once a week, and it was glaringly obvious when they were working. The food quality jumped up 10 notches and there would be a mountain of fresh-baked pastries.

They were also super nice, which helped a lot.

Back in the 80's the Chilliwack mess hall was considered the best in Canada and it was very good. The Salad bar was awesome and made all the restaurants I went to inadequate in comparison. I would say though that Air Force box lunches were several notches above army ones. I spent a week on HMCS Yukon, the food was good as well. Having eaten in British and US messes and shared hard rations with them, the Canadian military ate very well.

From some of the pictures on social media on Army box lunches, I'd say RCAF ones are still way better.

Last time I was in a Comox mess (admittedly some time ago) it was nowhere near the Wardroom. I guess it's been improved since?

Comparing the three (and VENTURE galley - forgot that one!), no, it's still at the bottom: serviceable salad bar, and possible to get a healthy meal off the steam line, so still better than what's implied to be the pre-reform USA norm.
